It has a beautiful structure and acidity along with enticing fruit flavors yet quite dry, this wine has to be tasted to be understood. Torrontes can be a strong match with food, but higher acidity can offset a creamy, buttery dish, and the perception of fruity sweetness may override spicy foods. Best enjoyed in its youth either by itself, or as a wonderful partner with smoked meats, mild to medium-strong cheeses, and it is ideal for Asian cuisine, seafood and desserts. As well as is thoroughly enjoyable alone as an aperitif and amazingly refreshing when well chilled.

Hand harvest during the 1st week of February, keeping a balanced ripe between sugar level and flavors.
A stemming machine is used to obtain the berries as a whole, in order to keep the fruit and avoid oxidation proccess.
We use N2 and CO2 in the entire process to avoid flavor oxidation
Alcoholic Fermentation for 15 days
Temperature is controlled to enhance fruit flavors between 10°C and 15°C
Malolactic Fermentation is avoided to enhance flavors of fruits and flowers.
We attempt to take the fruit directly from the vine into the bottle almost unaltered.
